UP’s crackdown on abattoirs threatens Lucknow’s Tunday Kababi

The historic ‘Tunday Kababi’, a trademark of Awadhi cuisine, prepared its once melt-in-the mouth ‘galawati’ kebab on Thursday without its main ingredient — meat.
After keeping the 112-year-old shop in Akbari Gate area of Chowk closed on Wednesday due to shortage of meat following the crackdown on slaughterhouses and butcher shops, it re-opened on Thursday serving chicken kebabs that has none of the tenderness of the original ‘galawati kebab’.
An owner of the shop, Mohd Usman, said that the oldest shop at Akbari Gate that started in 1905 had till now served only buffalo meat kebabs and parathas.
“Yesterday we were forced to close it down as there was no meat in the market. However, we can’t keep the staff idle so today we started shop with the innovative chicken kebabs”, he said.
BJP’s election manifesto had promised to close down illegal slaughterhouses and stop cattle smuggling to help improve the dairy industry in the state.
Soon after the formation of the Yogi Aditynath led BJP government on March 19 he instructed officers to strictly follow the party manifesto.
Since then nine meat shops have closed down in Lucknow alone. Chief Veterinary Officer of Lucknow Municpal Corporation AK Rao said that a comprehensive drive had been launched to close down illegal shops that, according to him, numbered around 200.
Similarly, two slaughterhouses were closed down in Allahabad. Another belonging to a former BSP legislator was closed down in Meerut despite it having the required license.
Three shops owned by Muslims selling mutton and fish were set ablaze by miscreants in Hathras on Tuesday night spreading panic in the area.
The terror among those dealing with meat — buffalo, mutton and even chicken — is so intense following the raids that they have closed shop waiting for the situation to be clearer in the coming days.
“There is no association of restaurant owners that can bring our plight to the notice of the decision makers”, pointed out Mohd Usman.
“I only pray that better sense prevails and the new government appreciates that we also contribute to preserve a rich cultural legacy through local cuisine, which is now under threat.”
